VEG KOLHAPURI FULL RECIPE

Ingredients:-
Vegetables:-
11⁄2 cup chopped cauliflower
1⁄2 cup chopped carrot
1⁄2 cup chopped French beans
1⁄2 cup capsicum
1 cup green peas
100 grams paneer
Chopped coriander
For Gravy paste:-
1 TBSP oil
1 TSP cumin seeds
3-4 red chillies
2 bay leaves
5-6 cloves
8-10 black peppercorns
2 green cardamom
1 black cardamom
1-star anise
Cinnamon stick
,1⁄4 teaspoon nutmeg powder
1 TSP sesame seeds
1⁄2 tablespoon chopped ginger
1 tablespoon chopped garlic
,8-10 cashew nuts
1 tablespoon grated dry coconut
1⁄2 teaspoon turmeric powder
chopped coriander leaves
1 green chilli
1⁄2 cup fried onion,
1 cup lukewarm water
For veg Kolhapuri Gravy:-
11⁄2 tablespoon of Gravy
1⁄2 tablespoons of butter
1 TSP cumin seeds
1 bay leaf
2 small finely chopped onion
1 chopped green chill
2 small Tomatoes,
Salt as per taste
1 cup lukewarm water
1⁄2 tablespoons ginger garlic paste
1⁄2 teaspoon coriander powder
1 tablespoon red chilli powder
1 TSP Kasuri methi
1⁄2 teaspoon garam masala
Method:-
Boil water in a pan or kadhai adds salt to taste and 3⁄4 teaspoon of sugar to keep the veggies green.
Now, add1 1⁄2 cup cauliflower,1⁄2 cup carrot chopped into cubes,1⁄2 cup French beans, 1⁄2 cup chopped
capsicum,1 cup green peas blanch them into the water for 1 minute,
Drain and remove the veggies in the bowl keep them in ice water to maintain crispness.
Heat 3-4 tablespoon of oil into the pan and fry the blanched vegetables for 4-5minutes on medium
flame. Strain the vegetables and set them aside
Heat the pan and add 1 tablespoon of oil and add 1 TSP cumin seeds,3-4 red chillies, 2 bay leaves,5-6
cloves,8-10 black peppercorn,2 green cardamoms, 1 black cardamom, 1-star anise, cinnamon sticks, 1⁄2,1⁄4
teaspoon nutmeg powder, 1 TSP sesame seeds, 1⁄2 tablespoon chopped ginger, 1 tablespoon chopped
garlic,8-10 cashew nuts,1 tablespoon grated dry coconut,1⁄2 teaspoon turmeric powder, chopped
coriander leaves, 1 green chilli,1⁄2 cup fried onion, and roast it well for few minutes, now add 1 cup
lukewarm water and cover it with a lid and let it cook till the red chillies become soft.
Cool the spices and grind into a fine paste
In the same pan add 11⁄2 tablespoon of oil, and 1⁄2 tablespoons of butter and after heating add1 TSP cumin
seeds,1 bay leaf, 2 small finely chopped onion, and cook till the onions become translucent, now add 1
chopped green chill, 2 small Tomatoes, Salt as per taste cover and cook till the tomatoes become mushy
now add 1 cup lukewarm water and let it cook for a while add1⁄2 tablespoons ginger garlic paste, 1⁄2 tea
spoon coriander powder, 1 tablespoon red chilli powder, 1 TSP Kasuri methi, 1⁄2 teaspoon garam masala
and sauté well now add the ground paste and let it cook for 3-4 minutes and add the fried vegetables
and 100 grams paneer cut into cubes and 2-3 tablespoon cream mix it well and add salt as per taste
cover the lit and let it simmer for a while.
